Coconut Chocolate Chunk Lactation Cookies

Breastfeeding can be rough, but it doesn’t have to be. Having yummy snacks on hand that are both good for you and help boost your milk supply can help improve your entire breastfeeding experience! Lactation cookies are an excellent way to make breastfeeding a bit more enjoyable, and you’ll be improving your milk output at the same time!

By making lactation cookies at home, you can control what ingredients are used to make your cookies as well as save yourself some money.

Here is my recipe for coconut chocolate chunk lactation cookies. These cookies are the perfect amount of crunch, chewiness, and sweetness. Not only are they amazing snack, but they can help boost your milk supply on days where your supply is low.

Making sure you are adequately hydrated is very important, so couple these cookies with your favorite drink. Such as red raspberry leaf tea or a breastfeeding safe sports drink for added electrolytes.

Now for the recipe!

Coconut Chocolate Chunk Lactation Cookies

You will need: 

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1/4 cup white sugar
  • 1 large egg
  • 1 teaspoon vanilla
  • 3/4 cup flour
  • 1/2 teaspoon salt
  • 1 1/2 tablespoons ground flax seed
  • 1/4 cup brewers yeast
  • 1 1/2 cups organic oats
  • 1/2 cup shredded coconut
  • 3/4 cup chocolate chunks

Mix together your butter, brown sugar, white sugar, egg, and vanilla. Beat until combined. Add in your salt and flaxseed. Whip until combined. Add your flour and stir to incorporate. Add in your oats and coconut and stir for a minute before adding your chocolate chunks. Make into 1 inch balls and bake for 10-15 minutes at 300°F. Let cool and store in an airtight container. This will keep them chewy and fresh.

This recipe makes 18 cookies. That might not sound like very many, but if you are only making enough cookies for yourself, this recipe is plenty!

If you eat two cookies a day, this recipe will last you about a week. An entire batch can cost you less than $10 in total. Something to keep in mind is; store bought lactation cookies can cost more but can be more convenient when you don’t have the time to make them yourself. Here is a yummy store bought option!

Substitutions

I love this recipe because it is very easy to substitute ingredients.

For a healthier option, you can substitute coconut sugar for the brown and white sugar. 

Add in a half cup of chopped nuts for some extra healthy fats and crunch.

Use whatever flour you want in place of white flour. If the cookies seem to dry with a different flour, add another egg, and that should resolve the issue! 

You can also leave out the coconut if you’d like!

Whether you choose to substitute sugars or flours, leave the recipe as is, or add extra yummy ingredients, I hope you enjoy this recipe!
