This recipe also includes ground flax seeds, which are also great for milk supply. By helping you stay full longer and a great source of natural fiber, flax seeds are an excellent ingredient to keep on hand. Combine these muffins with a glass of milk or an electrolyte drink and you have a great combination for boosting your milk supply quickly and naturally!

Jumbo Chocolate Chunk Lactation Muffins
(Makes 6 jumbo muffins or 12 regular muffins)
- 1 1/2 cups sugar
- 3 eggs
- 1 tbsp vanilla
- 1 tsp salt
- 1/4 cup olive oil
- 1 cup buttermilk
- 3 tbsp ground flaxseed
- 1/2 cup brewers yeast
- 1 1/2 cup of flour
- 3/4 cup cocoa powder
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 cup chocolate chunks
Mix together sugar, eggs, vanilla, salt, and olive oil. Beat until combined. Add in the buttermilk and the ground flaxseed. Mix until smooth. Add in the flour, cocoa powder, brewers yeast, baking powder, and baking soda. Beat until smooth and creamy, much like the consistency of brownie batter.
Pour batter into greased muffin tins. Sprinkle the chocolate chunks evenly on top of each muffin. Bake at 325 degrees for 25 to 30 minutes. Remove muffins from the oven and cool halfway before removing them from the muffin tin. Store in an airtight container or an airtight Ziploc baggie for up to a week.
